Stuck for lunch ideas?

Bored of soups and sandwiches and too wet and cold for salads? I recently bought this from Waitrose and had it for lunch today. It was seriously delicious and something I would usually do myself, but this is one of those crazy weeks and I don’t have much time to chop and prepare.

This is the wheatberries, lentil and green veg mix. I added some roasted aubergine, goats and sheep’s’ feta with a lashing of olive oil and lemon juice. This can be lunch for me alone at least three days and definitely two dinners for ‘meat free Monday’

It also makes for a balanced, nutritious, filling and tasty meal that doesn’t require a lot of fuss and should keep me full for at least 5-6 hours and limits the need for unnecessary snacking.
